Why USDA Numbers Differ From Chef Temps
The gap between the chef pull temperatures in the table above and the USDA's 145°F recommendation isn't a disagreement about food safety -- it's two different goals. USDA guidance sets a single minimum internal temperature (with a 3-minute rest) intended to make whole-cut beef safe regardless of how it's cooked, while chef doneness temperatures describe texture and color preferences that most home cooks pursue at their own discretion, since whole-muscle cuts like steak carry contamination risk mainly on the exterior, which searing addresses directly.
The USDA is explicit that color and texture are not reliable safety indicators on their own -- a steak can look adequately cooked while remaining under-temperature, or vice versa, which is why the agency recommends a meat thermometer over judging by appearance.
The 'Searing Seals in Juices' Myth
The idea that searing meat forms a crust that traps its juices inside dates to the mid-19th century, when German chemist Justus von Liebig proposed it as an explanation for why seared roasts seemed to stay moist. It was scientifically debunked in the early 1900s, but the claim persisted in home kitchens for decades afterward, and food scientist Harold McGee's influential book On Food and Cooking later reintroduced the debunking to a wide modern audience.
Measured moisture loss shows seared meat loses roughly the same amount of liquid as unseared meat cooked to the same internal temperature -- any crust that forms is not actually watertight. Searing's real value is flavor: the browning reaction it produces has nothing to do with moisture retention.
